Cooking

On Fat Tuesday I made some seafood gumbo. Maybe I am patting myself on the back a little much, but it was good. I didn't really use a recipe so below is the basic info.

Ingredients:
-flour
-oil
-4 celery stalks
-1/2 white onion
-3 cloves of garlic or 2 teaspoons of the minced kind in a jar
-3 veggie bullion cubes and 6 cups of water or 5 cups of veggie broth from a can and a cup of water (the canned stuff is super salty)
-5 okra fresh
-2 cans of diced tomatoes
-fish of choice *or chicken and sausage*
-salt, pepper, file, cayenne, cajun seasoning ... to taste
-Brown Rice

Make a Rue. Flour and Olive oil. 50/50 stir stir stir until it's caramel colored.
If you can hack it (I totally can, ha) saute garlic, celery, and onions. Once the rue is ready and the veggies have sweated, add them in.
Add 6 cups of veggie broth, 2 cans of diced tomatoes with juice. Add 5 fresh okra chopped into thin disks.
In the oven on high broil add 2 filets of tilapia, flounder, and tuna (or whatever fish floats your boat). Broil on high for 8 minutes.
In a small pan (you can use the same one as your veggies) add shrimp. I used a medium shirmp, probably 30 or so. Cook them with some lemon pepper seasoning (fresh lemon would rock...but I didn't have any).
Pull the fish and shrimp and mix into the gumbo.
Add file, salt/pepper, red pepper flake, and cayenne pepper to taste.
Serve over rice. We used Brown.
